Very rarely do I end up with a UI that I quite like. So, for the record (my own record actually), here are the settings.
Desktop - Gnome 2.22.3 (Ubuntu 8.04)

Window decoration: Soft Squares (http://art.gnome.org/download/themes/metacity/1070/MCity-SoftSquares.tar.gz)
Desktop Background: AnotherWaves (http://ftp.gnome.org/pub/GNOME/teams/art.gnome.org/backgrounds/NATURE-AnotherWaves_1920x1200.jpg)
Fonts (this makes a big difference): (The fonts are present in the ttf-xfree86-nonfree package)
